儿子明天(24-11-2013)大学毕业典礼,
特别制作了这个杏果蛋糕为他庆祝。
Apricot Tray Bake - specially made for the celebration of my
son's convocation on the 24th November 2013.
材料 Ingredients:
无盐牛油unsalted butter 200gm

做法 Method:
1) 牛油用木勺打至光滑。加入幼糖后打至变白、
轻及松滑。

2)加入蛋黄(每次一小匙,搅匀)

3) 加入vanilla,搅匀后置一旁。

4)打蛋白,先低速打至起泡沫。加入一半的幼糖,
用高速打,打至软性发泡。

5) 蛋白分两次加入蛋黄糊,轻轻搅匀。

6) 面粉与40gm杏仁粉过筛,加入蛋黄糊,搅匀。

7) 倒入一半的面糊进铺了蛋糕纸的烤盘(8寸),把面糊
抹平,再把杏果排放在面糊上。
(要洗去杏果上的糖浆,滴干水,再用纸巾抹干)

8) 把30gm的杏仁粉加入另一半的面糊,搅匀。

9) 把面糊装进挤花袋里。把面糊挤在烤盘的四周
及杏果之间的空间。(横挤和直挤)

Place batter into a piping bag and pipe batter horizontally and

10) 预热烤炉180°C。烘烤30 - 35分钟。
Bake in preheated oven at 180°C for about 30 - 35 minutes.
11) 把蛋糕移出烘炉,5分钟后脱盘,置放在网架上。
