材料:
牛油 butter 130gm
奶油芝士 cream cheese 200gm
细砂糖 castor sugar 200gm (我放170gm)
柠檬皮屑 grated lemon rind 2tsp
鸡蛋 eggs 4
普通面粉 plain flour 250gm
发粉 baking powder 5gm
混合香料 mixed spices 1/2 tsp
芝士粉 parmesan cheese 10gm
杂果 mixed fruits 350gm
(我用了100gm青和红jelly,250gm用rum酒腌过的
葡萄干)
做法 Method:
1) 将牛油、奶油芝士、砂糖和柠檬皮打至松发。
Beat butter,cream cheese,castor sugar & lemon rind until creamy.
2) 将鸡蛋逐个加入,搅拌至鸡蛋完全与牛油结合,才加入第二个鸡蛋。
Add in eggs,one at a time,beat well after each addition.
3) 将面粉、发粉和混合香料过筛,与芝士粉及杂果一起加入牛油混合物中,
拌匀成面糊。
Sift flour,baking powder & mixed spices.Fold into butter mixture together with
parmesan cheese and mixed fruits to form batter.
4) 把面糊倒入涂上油,铺上油纸的7"烤盘,160°C烘约45-60分钟,或至熟。
(我的烘烤炉用了80分钟)
Spread batter into 7"baking tin.Bake in oven for 45-60minutes or until cooked.
