法式蓝莓芝士千层蛋糕
6月10日:
侄儿志明回来度假,告诉我他很想学做法式千层蛋糕。刚巧上个星期UPSI
师训大学的学生打电话来订千层蛋糕,就约定侄儿6月9日早上过来我家。
调好了粉料,就开始煎饼皮了。除了前几片外,其余的我就让他把粉料剪完。
果然,虎姑无犬侄,功夫很到家!
UPSI大学生订的是水果千层蛋糕,因为看到我pose上面子书的照片。以下
就是他订购的法式水果千层蛋糕。
法式蓝莓芝士千层蛋糕 French-style Blueberry Cheese Mille Crepes
饼皮材料: To make crepes:
鲜奶 110克 fresh milk 110gm
鸡蛋 2个 2 eggs
盐 1茶匙 1 tsp salt
普通面粉 35克 35gm plain flour
糖粉 15克 15gm icing sugar
牛油 15克 ( 隔水炖溶) 15gm butter (melted by double-boiling)
馅料: For filling:
植物性鲜奶油 100克 (打发) 100gm non dairy whipping cream(whipped)
奶油芝士 125gm 125 gm cream cheese
蓝莓酱 100gm 100gm blue berry filling
1)奶油芝士 + 蓝莓酱搅拌至松软。
Beat cream cheese & blueberry filling till soft and creamy.
装饰: For decoration:
打发植物性鲜奶油 non-dairy whipping cream(whipped)
奇异果、草莓、葡萄 kiwi,strawberry,grapes
做法: Method:
1)把所有的饼皮材料(除牛油外)倒进搅拌均匀后过滤,休面30分钟。
要煎之前加入牛油拌匀。
Mix all the ingredients (except butter)in a mixing bowl.Strain through a sieve,
rest for 30 minutes.Add in the butter and mix well just prior to frying crepes.
2) 将不粘锅烧热,转小火。用勺子舀入适量的面糊。将两面饼皮煎熟,
重复至面糊煎完。
Heat a non-stick frying pan over low heat.Pour a little batter into the frying pan
tilting it so that just a thin layer of batter covers the base.Cook crepes till
underside has set.Repeat process to the end.
组合:
1)铺一片饼皮在蛋糕板上,涂抹一层打发鲜奶油。再跌上一片,涂抹奶油。
叠上切好的水果后铺上一层饼皮。以此类推做完所有的饼皮。
Place one piece of crepe on cake board.Spread a layer of whipped cream.Stack
on another piece of crepes.,spread whipped cream and fruit cubes on it,stack on
another piece of crepes.Repeat process to the end.
*我用了一片海绵蛋糕做底层。
I've used a slice of sponge cake as base.
